Toffee Nut Blondies

Apparently there are some people who don’t really like chocolate. Shocking, I know. For those kinds of people (and even the rest of us), these toffee nut blondies are a nice alternative to brownies. You can use whatever nuts you like, I used Brazil nuts here. For the toffee, use any kind of shop bought toffees or caramels that are firm, but still chewy. I used Werther’s Chewy Toffees, and just cut them into quarters. The Caramacs add a definite “something”, but if you can’t get hold of them you could use white chocolate instead. They have a gorgeous salty-sweet toffee taste along with a chewy-nutty texture.

Nutty Apple Loaf

Autumn brings a glut of apples, and the search for recipes to use them up in. This recipe for nutty apple loaf comes from the Hummingbird Bakery recipe book. It’s a lovely tea loaf, slightly spiced, with some cheeky chocolate pieces thrown in. The recipe calls for mixed nuts; I used walnuts, hazelnuts and almonds.

Pecan Pie

I thought I’d make some pecan pie as a nod to American Thanksgiving, which is today. I used this recipe from the Hummingbird Bakery cookbook. I love pecan pie, the nuts go so well with the toffee-like syrup. Corn syrup is not very easy to get hold of in the UK, although you can get it online. If you can’t get any, you can substitute golden syrup, or a combination of golden syrup and black treacle.

White Chocolate Chunk Cookies

These cookies are pretty much what you’d expect from their name. They don’t look gourmet, but distinctly homemade, whether that’s a good or a bad thing is up to you!

White chocolate chunk cookie

You could use chocolate chips, but I thought it would be more indulgent to use nice big chunks of chocolate. The main flavour comes from the chocolate, so you  might as well go for good quality. I used Green & Blacks.
