Lemon Cupcakes

This recipe for lemon cupcakes comes from The Hummingbird Bakery Cookbook. Adding a little lemon curd to the centre of each cupcake makes it a little bit more special, and the tang goes nicely with the sweet lemon butter icing.

Just a word of warning: the recipe for the lemon butter icing makes a large quantity, and I used probably less than half of what I made, so you could easily scale that down unless you are planning to be really generous with the topping!

The weather has finally improved here and it’s so nice to take advantage of the Amalfi lemons that are in season. Lemon is such a summery flavour. This lemon loaf from The Hummingbird Bakery Cookbook is the perfect vehicle. It’s a lovely sweet loaf, but what really makes it special is the lemon syrup drizzled on top.

Lemon Chicken Orzo

Orzo is a relatively new discovery for me. Ok, not the most life-changing of discoveries, just a new shape of pasta. I think it’s wonderful though. Looks like rice, tastes like pasta, and somehow seems much richer and more comforting than other pasta shapes. This recipe for lemon chicken orzo was one of those “what ingredients do I have in the cupboard” type of affairs, and it worked so well. You can easily change the ingredients around, but the key players for me are the lemon, the chicken, the orzo and some kind of cheese. With the freshness of the lemon, and with fresh, seasonal vegetables, this is perfect for summer suppers.

Lemon Garlic Chicken with Coriander (Ainsley Harriott)

This recipe for lemon, garlic and coriander chicken is the first of a few healthy recipes that I’ll be sharing from Ainsley Harriott’s Low Fat Meals in Minutes. The recipe uses ground coriander as well as a small amount of fresh coriander (aka cilantro), but they are both easily substituted with spices/herbs of your choice. ūüôā The lemon chicken is really delicious, and according to the book works out at just 195 calories a portion (plus whatever you decide to serve it with). Good for all of you trying to eat healthily, it’s low-calorie and low-fat because the chicken is marinated mostly in lemon juice.

Lemon Hummus

I suppose it’s the time of year when we all start trying to eat a little more healthily, whether as part of a new year’s resolution, or just to offset some of the damage done during the Christmas period. I am on the lookout for healthy recipes, not always my favourite thing!

So, I have my homemade pita bread, what else do I need? A little homemade (lemon) hummus, that’s what. Or houmous. Or, to give it its full title, Šł•ummuŠĻ£ bi ŠĻ≠aŠł•ńęna (it means literally “chickpeas with tahini”). There are thousands of recipes for hummus out there and it’s hard to find a “definitive” one. As long as you have chickpeas and tahini in there, I think you’re ok. Speaking of which, I learned today that if you have a jar of tahini on the shelf for a long time, it goes kind of… hard. A bit tricky to work with. It needed some elbow grease to get it into a spoonable texture.

Lemon Curd

How can you not love lemon curd? It’s tangy, sweet, fruity, creamy ‚ÄĒ it’s like summer in a jar. I was so excited to make homemade lemon curd for the first time and, although it seems like it might be complicated, it was really quite easy. There are, of course, many recipe variations out there, with different proportions of lemon, sugar and eggs. Some (yes you, Delia), include cornflour, which seems a bit bizarre to me. I used The Pink Whisk’s recipe for Super Zingy Lemon Curd.

Lemon Curd Pocket Cookies

After nutella pocket cookies, lemon curd pocket cookies! Since the recipe for the nutella pocket cookies was to make 48 cookies, I had a ton of cookie dough left over. Sadly, there was not a huge amount of nutella left, so I decided to fill the rest with lemon curd.

Spaghetti with Lemon, Goat’s Cheese and Thyme

This is a quick, simple pasta dish: cheesy, lemony comfort food. I adapted the recipe from In Erika’s Kitchen (mostly just added thyme). If you like a refreshing, citrussy pasta dish, this is great. It would probably be particularly nice in the summer-time.
