Autumn brings a glut of apples, and the search for recipes to use them up in. This recipe for nutty apple loaf comes from the Hummingbird Bakery recipe book. It’s a lovely tea loaf, slightly spiced, with some cheeky chocolate pieces thrown in. The recipe calls for mixed nuts; I used walnuts, hazelnuts and almonds.
Ingredients (makes 1 loaf)
- 175 g unsalted butter
- 140 g soft light brown sugar
- 2 tbsp strawberry jam
- 2 eggs
- 140 g plain flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 100 g chopped nuts
- 50 g dark chocolate, roughly chopped
- 2 eating apples, peeled, cored and chopped
Beat together the butter and sugar. Add the eggs one at a time. In a separate bowl, sieve together the flour, cinnamon and baking powder, and then beat this into the wet mixture. Add the chocolate, nuts and apple pieces and stir. Leave this mixture to refrigerate overnight, or at least a few hours.
Bake the loaf mixture in a greased & floured loaf tin for 50–60 mins at 170°C (325°F). Serve with a cup of hot tea.
