Bread Sauce

Bread sauce is a white sauce that dates back to medieval times and is traditionally served with Christmas dinner. It’s easy to make; you can start infusing the milk in between preparing vegetables and other trimmings and then finish the sauce off while the turkey is resting. If you’re just concentrating on the sauce, it takes about half an hour in total. Onions studded with cloves, infusing millk for bread sauceIngredients:

  • 280 ml milk
  • 1 onion
  • 4 cloves
  • 1 bay leaf
  • 50 g white bread crumbs
  • 30 g butter
  • salt and pepper

Stud an onion with the cloves (you can cut the onion or leave it whole). Heat the milk until it begins to boil. Take it off the heat and add the onion and bay leaf. Leave the milk to infuse for at least 15 minutes. Remove the onion, cloves and bay leaf and stir in the bread crumbs. Season, and return the sauce to the heat. Keep stirring until it boils and turn off the heat. Gradually beat in the butter and serve the bread sauce warm.
