Spaghetti with Lemon, Goat’s Cheese and Thyme

This is a quick, simple pasta dish: cheesy, lemony comfort food. I adapted the recipe from In Erika’s Kitchen (mostly just added thyme). If you like a refreshing, citrussy pasta dish, this is great. It would probably be particularly nice in the summer-time.

Here’s what’s in it (serves 4):

  • spaghetti (enough for 4 people)
  • 1 lemon (zest and juice)
  • 100 g goat’s cheese
  • 100 g parmesan cheese
  • 100 ml olive oil
  • small bunch of thyme
  • 1 clove garlic
  • salt
  • pepper

While the spaghetti is cooking, mix the zest and juice of the lemon with the goat’s cheese, parmesan, olive oil, salt and pepper. Crushed the garlic into a little oil and fry it gently so it is soft but doesn’t colour. Add the thyme and fry that until it’s crispy. Add the thyme and garlic to the cheese/lemon mixture, with a ladle-full of the pasta water and mix it all together. Once the pasta is cooked, stir it through the mixture, and serve.

It went down very well. None of the flavours really dominated, it was all quite subtle, and once added to the hot pasta water, the cheese mixture thickened into a lovely lemony sauce.
