After nutella pocket cookies, lemon curd pocket cookies! Since the recipe for the nutella pocket cookies was to make 48 cookies, I had a ton of cookie dough left over. Sadly, there was not a huge amount of nutella left, so I decided to fill the rest with lemon curd.
I had to add a lot more flour to the remaining dough, which hadn’t turned out right to start with. I rolled it out flat and cut it into circles.
Onto each disc I spooned a dollop of lemon curd, just off-centre, and folded them into pockets. I added a sprinkling of brown sugar and nutmeg to some of them.
I cooked them at 170° C for about 12 minutes until browned. Unbelievably, I think I actually preferred the lemon curd ones to the nutella ones as the lemon curd kept nice and moist whereas the nutella dried out a little bit.
